BISON TACOS

Just for a change of pace, and because I need time to calm down until I can talk about the idiots on the left with their hypocrisy about the effective malaria drug because Trump suggested it. So today I made bison tacos — not because I wanted to but because I had no choice. Yesterday when I went to Harris Teeter there was no ground beef or ground pork so all that was available was ground bison. Now first let me say they were edible but not really good, and I will explain more later.

I have had and enjoyed bison before. There is a great restaurant in Atlanta called Pittypat’s Porch which is located right in the middle of old time Atlanta about a half a block off Peachtree. It is a really cool colonial south type of restaurant where the waiters wear or did colonial garb. And I checked today and it’s still there. I had to check because I haven’t been there in probably forty years. There stick, if you will, is that while waiting for your table you get served drinks while you sit in rocking chairs. I am pretty sure that one of you reading this has been there with me.

They have a fabulous salad bar which even includes shrimp. You could make a great meal just from what they call the side board and that is an option. But if, back in the day when I could eat more than one course, you wanted to go to a main course there were several options but I always chose the buffalo and venison option and had it several times. It was delicious but the venison really needed the sauce because it has about zero fat and without sauce would be very dry.

I also believe I have made bison burgers at least once.

So here’s the problem, bison is extremely low in fat unlike beef and so you need to add some type of fat to make it compatible with what you would expect in a taco. Just to make clear what I’m talking about, you know when you’re told to drain the fat after browning the beef? Well guess what there was nothing to drain.

Hopefully, we will get back to normal soon. I don’t know why the meat is not on the shelves. I maybe understand why there was a run on toilet paper — I have at least four months available because I shop for things like tp at BJ’s and so had this available before the virus run. But you can only eat so much meat. Why are people buying a year’s supply? This is nonsense.
